Ingredients

6 to 8 inch Zucchini
2
6 to 8 inch Yellow Squash
1
28 ounce can Crushed tomato
4
cloves Garlic
1
TBS Itialian seasoning
1
Medium Onion
4
TBS Olive oil
1
to taste salt
1
to taste Pepper
1
pound rotini pasta optional
2
cups mozzarella cheese optional

  • 1 Dice onion and garlic saute in olive oil until onion is translucent
  • 2 Partially peel Zucchini and squash, cut lenght-wise and cut in small half rounds, add to onion and garlic. Add Itialian seasoning, salt and pepper and can crushed tomatoes.
  • 3 Simmer until tomatoes are cooked and mixture is reduced and thickened
  • 4 May be served as a side dish in this form
  • 5 optional add cooked al-dente paste to mix in step 3, instead of reducing heat through and put in a casserole dish, cover with mozzarella cheese and bake at 350 degrees for 30 minutes
