28 ounce can Crushed tomato

TBS Itialian seasoning

Medium Onion

TBS Olive oil

pound rotini pasta optional

cups mozzarella cheese optional
  1. Dice onion and garlic saute in olive oil until onion is translucent
  2. Partially peel Zucchini and squash, cut lenght-wise and cut in small half rounds, add to onion and garlic. Add Itialian seasoning, salt and pepper and can crushed tomatoes.
  3. Simmer until tomatoes are cooked and mixture is reduced and thickened
  4. May be served as a side dish in this form
  5. optional add cooked al-dente paste to mix in step 3, instead of reducing heat through and put in a casserole dish, cover with mozzarella cheese and bake at 350 degrees for 30 minutes
