When at home, do as they do in India by serving a raita as an accompaniment and a palate cooler when eating spicy foods.

cups plain regular or fat-free yogurt (1 pound)

cup water

medium unpeeled tart eating apple, coarsely chopped (1 cup)

tablespoon finely chopped fresh cilantro

tablespoon roasted cumin seed

teaspoon salt
1/4
teaspoon ground red pepper (cayenne)

  • 1 Beat yogurt and water in medium bowl, using wire whisk, until well blended. Stir in remaining ingredients.
  • 2 Refrigerate at least 30 minutes to blend flavors. Cover and refrigerate any remaining yogurt mixture up to 2 weeks.
