Yankee Pot Roast

Easy slow cooker pot roast recipe. Throw it all together in the morning and come home to a wonderful meal. Great served with biscuits.

Lb beef chuck roast

lg onion, chopped

cloves garlic, chopped

lb carrots, peeled and cut into 3 x 1/2 inch sticks

lb small red skinned potates, quartered
2
ribs celery, cut into 3 x 1/2 inch sticks

cup reduced sodium beef broth

T tomato paste
1/2
tsp dried thyme

T worcestershire sauce

T corn starch
  1. Coat slow cooker with non stick cooking spray.
  2. Place onion and garlic in slow cooker. Season beef with salt and pepper; place over onions. Arrange carrots, potatoes and celery around beef, in that order. Combine broth, tomato paste and thyme; pour over beef. Drizzle 1 T. of worc. sauce over top.
  3. Cover and cook on low heat 8 hours or high heat 6 hours.
  4. Remove beef from slow cooker and place on serving platter. Using a slotted spoon, arrange vegetables around roast. Keep warm.
  5. Strain cooking liquid into medium saucepan. Bring to a simmer.Combine corn starch with 3 T. water and stir into saucepan. Simmer for 1 minute until thickened. Stir in remaining 1 T. worc. sauce.
  6. Slice beef and serve with vegetables and gravy.
