Winter Cottage Fruit Salad

Fresh side dish in just 15 minutes! Winter fruits, berries and cottage cheese come together in this delicious salad served over lettuce leaves.

Ingredients

Boston or Bibb lettuce leaves

can (15 to 16 ounces) sliced peaches, chilled and drained

can (15 to 16 ounces) sliced pears, chilled and drained

cup fresh or frozen raspberries

container (16 ounces) reduced-fat small curd cottage cheese
1/2
package (8-ounce size) reduced-fat cream cheese (Neufchâtel), softened
1/4
cup maraschino cherry juice
1/4
cup chopped pecans

  • 1 Divide lettuce among 4 plates. Top with peaches, pears and raspberries. Add 1/2-cup scoop cottage cheese in center of each salad.
  • 2 Mix cream cheese and cherry juice until smooth; drizzle over salads. Sprinkle with pecans.

For a cool and quick salad or snack, keep canned fruits in the refrigerator. Canned fruits make this the ideal winter salad, but you can also use fresh peaches and pears when they are in season.
