Wilted Spinach Vinaigrette

tablespoon canola or soybean oil

cloves garlic, minced

package (10 ounces) washed fresh spinach leaves, stems removed

cup raisins
1/4
cup sunflower nuts or pine nuts

teaspoons sugar

tablespoons white wine vinegar

  • 1 Heat oil in 4-quart nonstick Dutch oven over medium heat. Cook garlic in oil 1 minute, stirring constantly.
  • 2 Add spinach and raisins; cook about 1 minute, stirring constantly, or just until spinach is barely wilted. Remove from heat; stir in sunflower nuts, sugar and vinegar. Serve immediately.
