This soup was delicious. I doubled the amount of mushrooms, using a mixture of cremini and shitake. It also needed salt and pepper, but other than that was great as written. Be sure to let your soup cool before adding the yogurt at room temperature, and then reheat gently.

Delicious! Warm and hearty, great comfort soup. I added extra mushrooms and used the full box of rice mix. I did not add the yogurt and, in my opinion, it was better without it. Everyone in the family loved this - from my 70-year old mother to my 11-year old daughter. It will definitely go into dinner rotation. Yummy!
