Ingredients

lb lean (at least 80%) ground beef

package (6.2 oz) fast-cooking long-grain and wild rice mix
1
can (10.75 oz) condensed tomato soup
1/4
cup milk
1/4
teaspoon pepper
1
cup shredded Cheddar cheese (4 oz)

Directions

  • 1 Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • 2 In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
  • 3 Meanwhile, make rice mix as directed on package—except omit butter. Stir rice mixture, soup, milk and pepper into beef. Spoon into casserole.
  • 4 Cover and bake 30 minutes. Sprinkle with cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted and mixture is hot.

So this was my first time making this dish and it wasn't too bad at all. I decided to alter it a little bit because I wasn't sure how I would like it with tomato soup. So I made it with cream of mushroom soup instead and it was really good. I did add garlic salt and pepper to the beef as it was cooking and then some more to the dish when mixing everything together. I also don't use just plain cheddar cheese, I used Cheddar Jack, it has more flavor. But this was good. As with many of these recipes you just need to make sure you add your own seasonings! I even got my picky 4 year old to eat this! :)

We were not a fan of this at all. Its edible but will not be going into the recipe book. It's definitely good for those on a budget!
