Wholesome Amaranth Bars

Our Wholesome Amaranth Bars are ready in under an hour and made with peanut butter, real maple syrup, marshmallows, Multigrain Cheerios and chocolate and butterscotch.

Ingredients

cup peanut butter
1/4
cup real maple syrup

cups miniature marshmallows

cups MultiGrain Cheerios™ cereal

cup popped amaranth*

cup dark chocolate chips
1/2
cup butterscotch chips
Additional popped amaranth, if desired

  • 1 Lightly spray 9-inch square pan with cooking spray.
  • 2 In deep large saucepan, melt 2 tablespoons of the butter over medium heat. Add peanut butter, syrup and marshmallows. Cook and stir until marshmallows are melted. Add cereal and 1 cup popped amaranth; stir until well coated. Press into pan.
  • 3 In small microwavable bowl, microwave chocolate chips, butterscotch chips and remaining 1 tablespoon butter uncovered on High about 1 minute, stirring once, until melted and smooth. Spread over bars. Sprinkle with additional popped amaranth. Cool. Cut into 3 rows by 3 rows.

Expert Tips

*To pop amaranth, heat nonstick skillet over high heat. Add 2 tablespoons amaranth at a time to the hot skillet; cook 30 to 60 seconds, stirring constantly with wooden spoon, until grains begin popping. Watch closely to prevent burning, and remove from heat as soon as amaranth is popped.

Amaranth is high in fiber and low in saturated fat. The grain can be popped like popcorn, flaked like oatmeal or ground into flour.
