White Turkey Chili

This cheesy beany chili made using turkey breast tenderloins is a filling recipe for dinner.

cups dried navy beans (1 pound), sorted and rinsed

tablespoons chicken bouillon granules

tablespoons chopped fresh cilantro or parsley

teaspoons ground cumin

teaspoon ground red pepper (cayenne)

medium onion, chopped (1/2 cup)

cloves garlic, finely chopped

cans (4 ounces each) chopped green chilies, undrained

cups water

pound turkey breast tenderloins, cut into 1/2-inch pieces
1/2
cup shredded reduced-fat mozzarella or Cheddar cheese

  • 1 Place beans and water in 4-quart Dutch oven. Soak at least 8 hours but no longer than 10 hours; drain.
  • 2 Stir in remaining ingredients except turkey and cheese. Heat to boiling; reduce heat. Cover and simmer about 1 hour or until beans are tender.
  • 3 Stir in turkey. Simmer uncovered about 15 minutes or until turkey is no longer pink in center. Sprinkle with cheese.

Joan K. Shares her Recipe "This is such an easy recipe to put together. I soak the beans overnight, drain them in the morning and finish the rest of the cooking just in time for lunch. Eating my main meal of the day at lunch worked better for me; I just felt more like eating then."

TO MAKE AHEAD: Divide chili among 3 airtight 2-quart freezer containers and label. Cool quickly and freeze no longer than 2 months. Remove lid from 1 freezer container; place upside down in 1-quart microwavable casserole. Microwave on High 5 minutes; remove container. Cover and microwave on High 20 to 25 minutes, breaking up and stirring every 5 minutes, until hot.
