Ingredients

bag (12 oz) white vanilla baking chips (2 cups)
1
container (1 lb) ready-to-spread creamy vanilla frosting
1/2
teaspoon cherry extract
Decorator frosting
Colored sugar
Candies

Directions

  • 1 Line large cookie sheet with foil. Spray foil with cooking spray. Generously spray 20 hollow metal 6-inch cookie cutters; place on cookie sheet.
  • 2 In 2-quart saucepan, melt white vanilla baking chips over low heat, stirring frequently, until smooth. Remove from heat. Stir in frosting and cherry extract.
  • 3 Fill each cookie cutter with 1/2 cup melted mixture. Refrigerate until firm, about 1 hour. Decorate as desired.
  • 4 Wrap each filled cookie cutter gift with cellophane or plastic wrap; tie with ribbon. Store in refrigerator.

White vanilla baking chips and baking bars are similar to white chocolate, but they do not contain cocoa butter. They melt easier than white chocolate.

Extracts are concentrated flavoring distilled from ingredients or left behind after evaporation. For liquid extracts used in baking, the flavoring is commonly stabilized in alcohol. The advantage of using extracts is that small doses can add lots of flavor without altering the composition of recipes. Stored in a cool dark place, liquid extracts keep indefinitely.

To enjoy this treat, you can eat the fudge with a spoon or, to loosen the fudge filling, run a thin-bladed knife along the inside edge of the cookie cutter and slip out the fudge. The cookie cutter can then be washed to use again.

Me too Maria, but it is long gone!I think I am going to have to make another one and ship it out Val :)It is Mangocheek, escpaielly as we only tend to see them once a year. Just wish my mother-in-law had made the trip too. We do miss her.
