White Chocolate/Peanut Butter Balls

Not too sweet. Tastes like a glazed doughnut. Easy to make.

cup peanut butter with white chocolate
1/2
cup powdered sugar
1/2
cup light corn syrup
2
cups crispy rice cereal
1
cup white chocolate baking chips

tablespoons water
  1. In medium bowl, stir together peanut butter, powdered sugar, and corn syrup until blended together. Stir in cereal. Mix all together.
  2. Roll 1 T of mixture into 1 1/2" balls. Place balls on non-stick cookie sheet or line a dish with aluminum foil so that the balls do not stick.
  3. In a 1 quart, microwavable bowl melt white chocolate chips and water in microwave until mixture is smooth. Spoon immediately onto each ball. Refrigerate until firm. Store in covered container in refrigerator.
  4. Note: You can substitute crispy rice cereal with Corn Flakes, Cheerios, or some other crunchy cereal if you choose.
  5. Note: If you would rather, instead of using the microwaver, melt white chocolate chips and water in a one (1) quart saucepan over medium heat, stirring constantly, until mixture is smooth.
