White Chocolate Cranberry Cookies

Ingredients

cup butter or margarine, softened
3/4
cup packed light brown sugar
1/2
cup granulated sugar

teaspoons vanilla

teaspoon almond extract, if desired

cups Gold Medal® all-purpose flour

teaspoon baking soda
1/4
teaspoon salt

cup white vanilla baking chips (6 oz)

cup sweetened dried cranberries

Directions

  • 1 Heat oven to 350°F. In large bowl, beat butter, brown sugar, granulated sugar, vanilla, almond extract and egg with electric mixer on medium speed until well mixed. Stir in flour, baking soda and salt. Stir in baking chips and cranberries.
  • 2 On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • 3 Bake 12 to 15 minutes or until light brown. Cool 2 to 3 minutes; remove from cookie sheet to cooling rack.

These were delicious. The only change I made was I used half cranberries and half dried blueberries...amazing.I thought these cookies had a great balance of sweet and tart. Next time, I may play around with it and try other dried fruits. :)
