pound boneless, skinless chicken thighs (5 thighs), cut into thin strips

cup dried great northern beans, sorted and rinsed

medium onion, chopped (1/2 cup)

clove garlic, finely chopped

teaspoons dried oregano leaves

teaspoon salt

can (10 3/4 ounces) condensed cream of chicken soup

cups water

teaspoon ground cumin

teaspoon red pepper sauce

can (4 1/2 ounces) chopped green chiles, undrained
  1. Mix chicken, beans, onion, garlic, oregano, salt, soup and water in 3 1/2- to 4-quart slow cooker.
  2. Cover and cook on low heat setting 8 to 10 hours or until beans are tender and chicken is no longer pink in center.
  3. Just before serving, stir in cumin, pepper sauce and chiles. Serve with additional red pepper sauce if desired.
