Ingredients

cups chopped seedless watermelon
3
tablespoons sugar
3
tablespoons light rum
3
tablespoons fresh lime juice
3
tablespoons water
4
small fresh mint leaves
Lime slices, if desired

  • 1 In blender, place all ingredients except lime slices. Cover; blend until smooth.
  • 2 Divide mixture among 5 (5-oz) paper cups. Cover cups with foil; insert craft stick into center of each pop. Freeze about 8 hours or until frozen. Garnish with fresh lime slices.

You can easily make this without the alcohol. But if you want the flavor of the rum you can add rum extract to taste. I would think 3 tsp would be sufficient to get the rum flavor. Otherwise add 3 extra T of lime juice.
