Ingredients

  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 3 to 4 watermelon cubes
  • Ice cubes
  • 3 tablespoons vodka (1 1/2 oz)
  • 1/4 cup watermelon juice
  • 1 tablespoon simple syrup
  • 1 tablespoon lime juice

Steps

  • 1
On saucer or small plate, mix sugar and salt. Rub rim of chilled martini glass with 1 of the watermelon cubes to moisten; dip rim of glass in sugar mixture.
  • 2
In cocktail shaker with ice, shake vodka, watermelon juice, simple syrup and lime juice until blended. Pour into glass, straining out ice. Thread remaining 2 to 3 watermelon cubes on skewer or cocktail pick; add to glass.

Tips from the Betty Crocker Kitchens

  • tip 1
To make about 1 cup of watermelon juice, place about 5 cups of fresh watermelon cubes in a blender. Cover; blend on high speed until pureed. Strain to remove seeds.
  • tip 2
Simple syrup can be purchased. Or to make your own, heat equal parts sugar and water to boiling in a small saucepan; boil and stir until sugar is dissolved. Cool before using.
