Walnut-Crusted Salmon

Ingredients

  • 2 slices firm whole wheat bread
  • 3 tablespoons finely chopped walnuts (about 1 oz)
  • 2 teaspoons olive or canola oil
  • 1/2 teaspoon dried thyme leaves
  • 4 teaspoons Dijon mustard
  • 4 teaspoons honey
  • 1 1/4 lb salmon fillets, cut into 4 serving pieces

    Heat oven to 400°F. Spray cookie sheet with cooking spray. Grate bread on large side of a box grater. In small bowl, mix bread crumbs, walnuts, oil and thyme.

    In another small bowl, mix mustard and honey; spread over tops of salmon pieces. Sprinkle with bread crumb mixture, pressing gently so crumbs adhere. Place on cookie sheet.

    Bake 12 to 14 minutes or until salmon flakes easily with fork and topping is lightly browned.

  • A food processor easily makes bread crumbs and chops the walnuts. Tear the bread into pieces and place it in the processor work bowl with the walnuts.
