Ingredients

lb walleye fillets, cut into 2 serving pieces

tablespoons all-purpose flour

egg or 2 egg whites

tablespoon water

cup all-purpose flour

cup finely chopped walnuts

tablespoon chopped fresh chives
1/4
teaspoon salt
1/8
teaspoon pepper
2
teaspoons canola oil

Directions

  • 1 Rinse fish; pat dry with paper towels. Place 2 tablespoons flour on sheet of waxed paper. In shallow dish, beat egg and water with fork or wire whisk until well mixed. In another shallow dish, mix 1/4 cup flour, the walnuts, chives, salt and pepper.
  • 2 Coat fish with flour, then dip into egg mixture. Coat both sides with walnut mixture.
  • 3 In 10-inch nonstick skillet, heat oil over medium heat. Add fish; cook 5 to 10 minutes, turning once, until fish flakes easily with fork.

Coating the fish with walnuts adds flavor and crunch.

Because walnuts are high in fat (a good fat for your heart), they can become rancid easily, so it's a good idea to taste them before using if you've had them for a while.
