Walnut-Chicken Salad

Ingredients

Lemon-Ginger Dressing

cup mayonnaise or salad dressing
1/4
cup Yoplait® Original 99% Fat Free lemon burst yogurt

teaspoon sugar
1/4
to 1/2 teaspoon ground ginger
Dash salt

Salad

cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
3/4
cup chopped celery
1/2
cup chopped walnuts
1
cup sliced or quartered strawberries
Bibb lettuce

  • 1 In small bowl, mix all dressing ingredients.
  • 2 In large bowl, mix chicken, celery and walnuts. Add dressing; toss. Fold in strawberries. Serve on lettuce.

Fill small dinner rolls with the chicken salad for buffet sandwiches.

Use peaches or raspberries for the strawberries and your favorite nut for the walnuts.
