Wacky Tomato Soup Cake

Wacky Tomato Soup Cake

Don't be afraid of the name...this is actually DELICIOUS! It tastes like a cross between carrot cake and spice cake! This was an Internet recipe, posted by a cook named Pearl Florick. My own photo.

  1. Preheat oven to 350 degrees.
  2. Grease a 8x8x2 inch baking pan.
  3. In a medium size bowl, cream together the butter and sugar with the egg.
  4. In a small bowl, mix together the tomato soup and baking soda.
  5. In a large bowl, wisk together the flour, cinnamon and ground cloves. Then add the egg mixture and the tomato soup mixture to the flour mixture. Stir til well combined.
  6. Pour into prepared baking pan and bake for 40 minutes or til toothpick, inserted into the center, come out clean.
  7. Remove from oven and cool completely.
  8. When completely cooled, turn over, onto a serving platter and frost with your favorite icing or glaze. I used a sweetened cream cheese glaze.
  9. I do not suggest eating this cake warm...it taste SO much better chilled!
