Cheesy Veggie Quesadillas

Bring Italian flavor to a Mexican favorite! Dipping the cheesy veggie wedges in spaghetti sauce is spectacular.

Ingredients

cup shredded zucchini
1
small tomato, seeded and chopped ( 1/2 cup)
1
tablespoon chopped fresh or 1 teaspoon dried oregano leaves
1/2
teaspoon garlic pepper
8
whole wheat flour tortillas (8 inches in diameter)
2
cups shredded Italian cheese blend (8 ounces)
Spaghetti sauce, heated, if desired

Directions

  • 1 Heat oven to 350°. Mix zucchini, tomato, oregano and garlic pepper in medium bowl.
  • 2 Place 4 tortillas on ungreased large cookie sheet. Sprinkle 1/2 cup of the cheese evenly over each of the 4 tortillas. Spoon one-fourth of the vegetable mixture over cheese. Top with remaining tortillas.
  • 3 Bake about 6 minutes or until hot and cheese is melted. Cut each quesadilla into 6 to 8 wedges. Serve with spaghetti sauce.

You can use any type of tortilla for these quesadillas. Try plain, fat-free, vegetable or herb tortillas to give the quesadillas a different twist.

These are great served as an appetizer, too. Offer them to family or friends as a prelude to an Italian-style meal. Don't forget to warmed marinara or spaghetti sauce for dipping.

You can enjoy the flavors of many cheeses when you use the Italian blend cheese, which can include mozzarella, provolone, Romano, Asiago and Parmesan cheeses.

Just when I thought I'd run out of ways to cook zucchini I spotted this recipe. Great for a light supper after a weekend of meals that were heavy on the meat. I added some basil and used garlic powder and freshly ground pepper in place of the garlic pepper. Because my husband does not care much for tomato sauce, I did not make spaghetti sauce for dipping, but would recommend the quesadilla without it, hands down.

I had Smart tortillias whole wheat 80 cals each in my freezer and the rest in the ice box. I only had fat free cheeses but it was great and my husband said it just hit the spot. Great and did not take long. I have a salad shooter so it was really fast on the grating. It really was filling and just hit the spot and did not take me long at all since I put it on my grilling machine.
