I've never even heard of using cucumber seeds in any riepce. But if leftover, wouldn't that mean they aren't fresh anyway? As far as I know cucumbers seeds aren't a common ingredient in any dish. In many riepces, the seeds are scooped out of the cucumbers and thrown away not used for anything else. Perhaps you mean some other kind of seed?Cucumber seeds aren't hard, so they really wouldn't provide crunch to a salad, or flavor for that matter.
