I love this recipe! I've made it several times; it's something I can feed my vegetarian in-laws and everyone likes it. If you don't want to call it a Reuben, call it a grilled vegetable sandwich. The only change I made was to cook sliced fresh red bell peppers with the onions rather than using jarred peppers -- works better for me.

This sandwich lacks any substance - just because it's vegetarian doesn't mean you take the meat out of the recipe and its a meal. Why not try adding a grilled portobello mushroom to give it substance and style?
