Vanilla-Ginger-Pear Crumble

Ingredients

Pear Mixture

  • 6 medium slightly ripe, firm Bartlett pears (about 2 3/4 lb), peeled, cut into 1/2-inch slices (about 6 cups)
  • 1/4 cup granulated sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 2 teaspoons vanilla
  • 1/2 to 3/4 teaspoon ground ginger

Topping

  • 1/3 cup Gold Medal™ all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold butter or margarine, cut into pieces
  • 12 vanilla wafer cookies, crushed (about 1/2 cup)

    Heat oven to 375°F.

    In large bowl, mix pear mixture ingredients until evenly coated. Spread in ungreased 8-inch square (2-quart) glass baking dish.

    In same bowl, mix 1/3 cup flour and the brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture looks like coarse crumbs. Stir in crushed cookies. Crumble over pears.

    Bake 50 to 60 minutes or until pears are tender and topping is golden brown.

  • The pears in this recipe should be slightly ripe, yet firm. If you need to ripen your pears a bit, place in a sealed paper bag at room temperature.
  • For an elegant touch, serve this dessert in a stemmed glass!
