These were absolutely delicious. Chilling the dough is definitely necessary, as the large quantity of butter can make it stick to the counter relatively easily, even when floured. Once you chill it in the fridge, it's actually helpful to put the dough you're not using into the freezer while you work with small portions at a time. It was also extremely helpful to have two people, as it let us work with the dough faster before it warmed up. These taste great. Sweet, but not cloyingly so. Soft and chewy - definitely check these at 4.5 to 5 minutes. Decorating icing is a really nice touch - not only for a cute personal flare, but also to add a little bit of moisture and a different flavor. Oh, and one last tip - making them a little thicker makes them easier to handle. We still wound up with over 75 cookies, even though we rolled them out thicker than 1/8 inch.
