Ingredients

lb lean (at least 80%) ground beef
1
small onion, chopped (1/2 cup)
1
medium green bell pepper, coarsely chopped (1 cup)
2
jars (14 oz each) pizza sauce
1
package (6 oz) diced pepperoni
1
can (2 1/4 oz) sliced ripe olives, drained
2
cups Original Bisquick® mix
1
cup milk
2
eggs
1 1/2
cups shredded pizza cheese blend (6 oz)

  • 1 Heat oven to 350°F. In 12-inch skillet, cook beef, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • 2 Stir in pizza sauce, pepperoni and olives; heat until hot. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
  • 3 In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour evenly over pepperoni mixture.
  • 4 Bake uncovered about 25 minutes or until crust is light brown. Sprinkle with cheese. Bake uncovered about 5 minutes longer or until cheese is melted.

If you want to prepare part of this casserole ahead of time, after draining the beef mixture and stirring in the pizza sauce, pepperoni and olives, cover and refrigerate up to 24 hours. Be sure to heat the mixture to boiling before spooning it into the baking dish and adding the topping.

Pizza cheese blend is a packaged mixture of the favorite cheeses used on pizza. The flavors are perfect for this casserole.

To tote, tightly cover the baking dish with foil and place in an insulated cooler or a box lined with newspapers or towels. Be sure to take along a large serving spoon.

I just had a thought, instead of adding some sugar to the Bisquick mix, I think I will add some bacon bits to it, to add some extra flavor next time I make this. Think it will be pretty good!!

This was great!! Whole family loved it, even my oldest who doesn't care for green peppers went back for seconds. The youngest, who snubs his nose at casseroles, loved it! I didn't add olives,but subsituted mushrooms instead. Cooked both meats with garlic,and some oregano, and the veggies. Cut the recipe in half for a 9 inch glass deep pie dish. Also after the meat mixture was put in the pie dish, I sprinkled pizza cheese (Motz) on top before I put the bisquick mixture over it all. Also I added a little bit of sugar in the bisquick mix. When done, added some shredded cheddar on top to melt for about 5 minutes. A very fast and delicious dish! Have to try it! It found it's way into my family's supper recipe box!
