Ingredients

cup powdered sugar
1
package (3 oz) cream cheese, softened
1/3
cup butter, softened
3
tablespoons shortening
1
teaspoon vanilla
1
egg yolk
1 1/2
cups Bisquick® Gluten Free mix
Additional powdered sugar for work surface
1
container Betty Crocker® Rich & Creamy vanilla frosting, if desired

Directions

  • 1 Heat oven to 375°F. Lightly grease cookie sheets with shortening or cooking spray. In large bowl, stir 1/2 cup powdered sugar, cream cheese, butter, shortening, vanilla and egg yolk with spoon until well blended. Stir in Bisquick mix until dough forms.
  • 2 On work surface sprinkled with additional powdered sugar, roll half of dough at a time to 1/4-inch thickness. Cut with cookie cutters. Use metal spatula to transfer cookie cut-outs to cookie sheets, placing cut-outs about 1 inch apart.
  • 3 Bake 6 to 8 minutes or until edges are light golden brown. Cool 2 minutes; carefully remove from cookie sheets to cooling racks. Cool completely, about 15 minutes. Spread frosting on cookies.

I have been searching high and low for a GF version of those round, frosted sugar cookies that are usually decorated for holidays and this recipe does the trick! I didn't want to make cut-outs, so I didn't really attempt that with this recipe. I just made little balls and the smooshed them with the bottom of a glass. The dough is VERY sticky, so I was NOT sparing with the extra confectioner's sugar when rolling out the dough (I even covered the bottom of the glass in sugar). I tasted the dough before I rolled it out into gobs of confectioner's sugar and it was a little bland - I think that is to account for the large amount of sugar needed to keep the dough workable. Once baked, they tasted wonderful plain, but the icing was truly must-have! Seriously, I would HIGHLY recommend getting the icing listed on the recipe for these cookies. The cookies DID turn out a little crumbly. Frosting them was a bit of a trick, but I let them set out overnight on the counter and they seemed to pull some moisture from the air (we live on the coast so it's relatively humid here). And this also let the outer layer of the icing harden so the cookies could then easily be stored in a sealed container. The next time I make these, I will be trying the applesauce trick that another commenter posted and see if it helps with the moisture.

These cookies are great! I kept eating them before we iced them. Like most gluten free baked goods, I am sure that they could be dry. As a rule, I leave out a little bit of butter and add about a half of a kids single serve apple sauce to the mix. It helps with moisture. The cookies are delicate. If you snack on the warm broken ones you won't be disappointed!

The taste of the recipe was pretty good. However I was very disappointed that the cookies were dry and crumbled. They were impossible to ice as they were falling apart.
