I made this cake in a 9x13 pan. I omitted the OJ, orange peel, and coconut. I increased the water to 1 cup, and used 3 eggs. I added 3/4 cup of grated carrots as suggested. It was very moist. It did not taste like a box cake.
I made my own cream cheese frosting: 4 oz. light cream cheese, 2 tbsp. margarine, 1 tsp. vanilla, and 1 cup confectioner's sugar. It was not overly sweet. It definitely is the ultimate carrot cake!
