Ingredients

1 1/2
cups finely crushed vanilla wafer cookies (about 40 cookies)
1/4
cup butter or margarine, melted
2
packages (8 oz each) cream cheese, softened
1/2
cup sugar
2
teaspoons vanilla
2
large eggs
1/4
cup hot fudge topping
1
cup caramel topping
1/2
cup coarsely chopped pecans

Directions

  • 1 Heat oven to 350°F. In medium bowl, mix cookie crumbs and butter. Press firmly against bottom and side of 9-inch glass pie plate.
  • 2 In large bowl, beat cream cheese, sugar, vanilla and eggs with electric mixer on low speed until smooth. Pour half of the mixture into pie plate.
  • 3 Add hot fudge topping to remaining cream cheese mixture in bowl; beat on low speed until smooth. Spoon over vanilla mixture in pie plate. Swirl mixtures slightly with tip of knife.
  • 4 Bake 40 to 50 minutes or until center is set. (Do not insert knife into cheesecake because the hole may cause cheesecake to crack as it cools.) Cool at room temperature 1 hour. Refrigerate at least 2 hours until chilled. Serve with caramel topping and pecans. Store covered in refrigerator.

AWESOME!! I make a cheesecake for every holiday and this one got raves from everyone. The only thing I changed on the recipe is that I used a springform pan instead of the glass baking dish the recipe called for. I was afraid it may be too runny and not stand up like a cheesecake did so I let it cool longer in the ring, but it held up beautifully. I let everyone add their own caramel and nuts to their own tastes. I also had pecans, cashews and cocktail peanuts for variety. It was very rich, very creamy and just plain decadent. They've already asked for this one to be made again for Christmas!
