Ingredients

Cookie Base

1: teaspoon instant espresso coffee granules or instant coffee granules

2: tablespoons hot water

1: pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix

1/4: cup vegetable oil

1: egg

Filling

1: package (8 oz) cream cheese, softened

3: cups powdered sugar

1/2: cup unsweetened baking cocoa

2: eggs

2: rolls (1.7 oz each) milk chocolate covered caramels, cut into fourths

1: cup chopped pecans

Topping

1/4: cup caramel topping

1/4: cup chopped pecans

Directions

1 Heat oven to 350°F. Spray bottom and sides of 13x9- inch pan with cooking spray. In small bowl, stir coffee granules and water until dissolved, set aside. In large bowl, stir cookie mix, oil, egg and dissolved coffee until soft dough forms. Press in bottom of pan. Bake 10 minutes; cool 15 minutes.
2 In medium mixing bowl, beat cream cheese, powdered sugar, cocoa powder and eggs until smooth; fold in caramels and pecans. Gently spread over cookie base. Bake 30 to 35 minutes, or until set. Cool 30 minutes.
3 Drizzle caramel topping over bars; sprinkle with pecans. Refrigerate 2 hours or until set. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

Expert Tips

These bars have layer upon layer of decadent chocolate, caramel and pecans, yet are surprisingly easy using the cookie mix. When I served these at a women’s meeting last week there were NO leftovers! Yes, they are that good!

Helpful hints – spray knife with cooking spray before cutting the caramel candies and they won’t stick to the knife.

In response to Kalimae-- Why couldn't you use the regular choc chip cookie mix and add cocoa and extra choc chips? May need to add another spoonful or water or oil?? Just an idea! Hope it helps--going to try this tomorrow this way and see how they go.

No one in my area (within 50 miles) sells the Betty Crocker double chocolate chunk cookie mix! I am so disappointed too because several of these bars call for this mix and I really want to try them. :( Can I substitute something else in the place of this mix?

I made these they were good but the bottom around the corners were a little dry I did as the recipe called for, should I use foil on bottom of pan and and spray before the crust is put down or should I use a glass baking dish? What will help from being to dry??
