Turkey Sausage Cassoulet

Ingredients

  • 1/2 pound fully cooked smoked turkey sausage ring, cut into 1/2-inch slices
  • 1 medium carrot, shredded (2/3 cup)
  • 1 small onion chopped (1/4 cup)
  • 2 cans (15 or 16 ounces each) great northern beans, drained and 3/4 cup liquid reserved
  • 1 teaspoon dried marjoram leaves
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

    Mix all ingredients including reserved bean liquid in 2- to 3 1/2-quart slow cooker.

    Cover and cook on low heat setting 6 to 8 hours or until vegetables are tender.

  • Turkey sausage is lower in fat than pork sausage but still is high in flavor! Check the label on the sausage you select to be sure it is made with turkey breast, which is lower in fat than turkey sausage made with dark meat.
  • A cassoulet is a classic French dish of dried white beans and various meats. Traditionally, it is covered and cooked very slowly to blend the flavors, so making it in a slow cooker is ideal. This cassoulet takes a shortcut by using canned beans and turkey sausage. You can use any canned beans you have on hand, such as butter, kidney or black beans, and voilà-you'll still have a wonderful cassoulet.
