Turkey Mini Sandwiches

Turkey, cranberries and Swiss cheese star in a layered and baked made-from-Bisquick® mix sandwich.

Ingredients

cups Original Bisquick® mix
1/2
cup sweetened dried cranberries
1
cup milk
2
tablespoons yellow mustard
1
egg
1
package (6 oz) thinly sliced cooked smoked turkey, chopped
1
cup shredded Swiss cheese (4 oz)

Directions

  • 1 Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, stir Bisquick mix, cranberries, milk, mustard and egg until blended. Pour half of batter into baking dish.
  • 2 Top with half of the turkey and sprinkle with 1/2 cup of the cheese to within 1/4 inch of edges of baking dish. Top with remaining turkey. Pour remaining batter over turkey.
  • 3 Bake 45 to 50 minutes or until golden brown and set. Sprinkle with remaining 1/2 cup cheese. Let stand 5 minutes before cutting. Cut into 9 squares; cut each square in half diagonally.

Bake sandwiches the day before and cut. Store covered in refrigerator and serve cold the next day. Or place on cookie sheet, cover loosely and reheat in 350°F oven about 10 minutes or until warm.

The bread turned out a little dry, but I also halved the recipe so I might have overcooked it. It tasted great, next time, I'll try the whole recipe, I wonder if it freezes well, this would make a great, quick, make ahead lunch.

Good Stuff! I used Tofurkey Deli slices, some home made swiss, flax eggs, and heart smart bisquick, it turned out great! I will definitely make this again.
