Turkey Drumsticks with Plum Sauce

Ingredients

  • 4 turkey drumsticks (2 1/2 to 3 pounds), skin removed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup plum sauce
  • 1/3 cup sliced green onions
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 3 cups hot cooked rice, for serving

    Sprinkle turkey with salt and pepper. Place turkey in 5- to 6-quart slow cooker. Mix plum sauce, onions and soy sauce; pour over turkey.

    Cover and cook on low heat setting 8 to 10 hours or until juice of turkey is no longer pink when centers of thickest pieces are cut.

    Remove turkey from cooker. Cover with aluminum foil to keep warm.

    Remove any fat from sauce. Mix cornstarch and water; stir into sauce.

    Cover and cook on high heat setting 15 to 20 minutes or until sauce has thickened. Cut turkey from drumsticks. Serve with sauce and rice.

    Take a few minutes to remove the skin before cooking the drumsticks. First, less fat will form on top of the sauce during cooking. Second, the skin would not become golden brown because it will be simmering in the sauce. Third, the flavor of the plum sauce will cling to the turkey meat instead of to the skin.

    Plum sauce is a sweet-and-sour sauce made from plums, apricots, sugar and seasonings. You can find it in the Asian-foods section of the supermarket or at an Asian grocery store. If plum sauce isn't available, use apricot or cherry preserves and it still will be delicious!

    Keep to the Asian theme by serving this plum-good turkey with crisply cooked pea pods. A fresh salad of assorted melon-cantaloupe, honeydew and watermelon-drizzled lightly with your favorite fruit salad dressing makes a light yet satisfying meal.
