This sandwich was light, refreshing and surprisingly filling (even though I put them on whole-grain sandwich thins rather than whole slices of bread). The cucumbers add a nice, cool crunch.
I'm not sure if its because I used dried dill weed, but the dill flavor didn't really come through on the mayo for me. All the same, it was a perfect summer sandwich. I served it with my mom's German tomato salad (chopped tomatoes, sugar, red wine vinegar, salt and onions) as a side and a dill pickle. We can't wait until the weather cools off so we can have the same meal on of our picnics!
