I thought these were very good. I did find it difficult to get the dough shaped correctly. I don't think that I got them thin enough the first time. But it is a great change of pace from the usual tacos.

Let me start off by saying that this meal was incredibly easy to make and it tasted great! It was definitely a way to satisfy that taco craving while adding a different feel and flavor to the meal. When making this I substituted the heart smart Bisquick mix instead of the original and used fat free milk instead of whole milk. I feel that using the fat free milk didn’t create the correct texture for the cornbread rounds making the dough crumbly and hard to work with. Making any form of dough is a weakness of mine so it could have just been that as well. The other thing I was surprised with was how small they came out for me. No matter how much I flattened them they were still about the palm of my hand. So next time I would add some tortilla chips on the side or even some rice just to go with the extra meat that falls off or doesn’t fit on the round.

These were really good, but I had to make the cornbread rounds a little thinner than the recipe called for. They tasted better when you didn't get so much cornbread in the bite. I also added beans on the bottom layer and some avocado. It was easy and they were tasty. The kids liked them too.
