Turkey Chef Salad

Dinner ready in just 15 minutes! Try this turkey salad packed with salad greens, garbanzo beans, radishes and mozzarella – a fresh flavorful meal!

Ingredients

cups bite-size pieces mixed salad greens

piece (1/2 lb) cooked low-sodium turkey (from deli), cut into 1/4-inch julienne strips

can (15 oz) garbanzo beans, drained, rinsed

piece (4 oz) mozzarella cheese, cut into 1/2-inch cubes

radishes, sliced

tablespoons balsamic vinegar

teaspoons olive or canola oil

teaspoon grated lemon peel

teaspoon sugar

  • 1 Among 4 dinner plates, divide salad greens. Top evenly with turkey, beans, cheese and radishes.
  • 2 In small bowl, beat remaining ingredients with wire whisk until blended. Drizzle dressing over salads.

Expert Tips

To save time, ask for the 1/2 pound of low-sodium turkey to be cut into 1/4-inch-thick slices. Then you can just cut the large slices into 1/4-inch-wide strips.
