I mix salsa with the crushed avacado and a bit of taco seasoning. The kids love it! Add some pepper jack or sharp cheddar.

I loved this recipe and will definitely make it again! The prep time of 15 minutes is a little misleading because it assumes the avocado is already pitted and mashed and that your bacon is already cooked and crumbled. I used turkey bacon and tomato instead of the red peppers. I also sprinkled a little shredded cheddar cheese on top. It was delicious! The guacamole would be a great dip with just the taco sauce and garlic salt.

My entire family loved this recipe and it is so easy. I added chopped tomatoes and it was wonderful. If your avocado isn't completely ripe, you might try using a chopper to mix all ingredients.

Make SURE your avacado is ripe enough to smash...mine was hard as a rock and therefore ripped the tortilla. All the stuffing went out the far side of the rolled tortilla. I did not take it to my pot luck--but was great in a sandwich.
