Rotini or juniorettes pasta can be used instead of the gemelli.
Toasting almonds is easy. Just place them in an ungreased shallow pan and bake at 350°F for 6 to 10 minutes, stirring occasionally, until golden brown.
Serve this tasty salad with whole-grain rolls, fresh orange wedges and tall glasses of iced tea or lemonade.
