This has become one of our favorite meals. BUT--use at least 3 cups of turkey and add perhaps 1/2 cup of chicker broth else this will seem dry. Works equally well with chicken or turkey, so a great way to use up leftover roast chicken.

I added 1/2 tsp. of poultry seasoning to the cornbread mixture and sauted a sliced carrot and celery in butter until just tender before adding to the mix. It was great. I loved it. This only serves one person (me).

This recipe has potential, but I think it needs some tinkering. It had a good overall flavor, but seemed to have too much breading (corn bread in the casserole, Bisquick topping) compared to the amount of meat and vegetables. I might try this dish again, doubling the turkey and peas, or may omit the Bisquick topping and just sprinkle some corn meal on top of the casserole mixture.
