Now this is my type of soul food! Quick, easy Mexican-inspired food! I made this recipe exactly as directed and it turned out delicious! I made a big batch of the meat-bean mixture and froze it in portions. I am a little busy today, so I popped a bag out of the freezer and we will have a delicious and healthy dinner tonight! And it is a perk that corn tortillas keep fresh so long without spoiling because I just keep them on hand and have tostadas on demand! :) I highly recommend this recipe!

I made these turkey tostadas my way. Got ground turkey, browned it, added green onion and 1 Tblspn Pampered Chef "southwest seasoning" with 1/2 c water and simmered: added chili beans. Made in morning then refrigerated. This evening I heated bean-meat mixture, cut more green onion, tomatoes, grated cheese. (I also bought tostada shells at the market.) We topped them with shredded lettuce, sour cream, sliced olives and salsa. It got rave reviews. My friend's daughter (mother of a newborn) ate and had seconds! So did everyone else, including me! Will certainly make again

This was a very good recipie. It was quick and easy to make. I modified this recipie a bit by adding my own home made taco seasoning (no salt) and added green peppers. The fresh cilantro gave it a good taste. We decided not to toast the wheat tortilla's, so we had them taco style. I served with some spinach and cheese on the side. I heated some black beans on the side to add to the dish if anyone wanted them. I was told this dinner was great. Not much was left over. I will be making this again.
