Tropical Island Chex® Mix (1/2 Recipe)

Ingredients

cups Rice Chex® cereal
1/2
cup shredded coconut, if desired
1/2
cup dried banana chips
2/3
cup dried tropical three-fruit mix (from 7-oz package)
1/3
cup macadamia nuts
1 1/2
tablespoons butter
2
tablespoons packed brown sugar
2
tablespoons frozen (thawed) pineapple or orange juice concentrate

  • 1 In large microwavable bowl, mix cereal, coconut, banana chips, tropical fruit mix and nuts.
  • 2 In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and pineapple juice concentrate. Microwave uncovered on High about 30 seconds or until hot; stir. Pour over cereal mixture, stirring until evenly coated.
  • 3 Microwave uncovered on High 5 to 6 minutes, stirring every 2 minutes, until mixture begins to brown.Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.

This was a good change of pace from regular Chex mix. However, at the second stirring (after 4 minutes) the fruit was totally charred and the cereal was scorched in places. If I make this again, I would add the fruit after microwaving.

The tropical chex mix is the best you have ever had..We just bought for the first time and will buy it again... do you ever have coupons to use on these products at our grocery store and Wal-Mart? If so can you mail us some to use right now? It's really the best mix out there right now. We have been to Hawaii and it reminds us of paradise every time we eat it... Thanks for this mix and please keep it on the market.... Sincerely, Jacque
