Ingredients

3 1/2: lbs Russet Potatoes (peeled and thinly sliced)

2: cups heavy (whipping) cream

2: cups whole milk

1: teaspoon butter

1: small yellow onion (finely diced)

1: teaspoon salt

1: teaspoon pepper

8: ounces *cheddar cheese blend

: Butter Flavored Pam

Directions

1 Preheat oven to 400F degrees. Prepare a 2-quart baking dish with Pam spray and set aside
2 In a large saucepan, heat the cream, milk, butter, salt, and pepper to simmer over medium-high heat taking care not to scald.
3 Add potatoes and onion, cover, and simmer for 10 minutes. Remove from heat.
4 Layer baking dish with 1/3 of the potato/cream mix then add 1/3 of the cheese mix. Alternate layers ending with cheese on top.
5 Cover and bake for 30 minutes or until browned and bubbly.
6 Allow to rest for 5 minutes. Enjoy!

* I use "Weis Markets Three-Cheese Sharp Cheddar" mix which is a gourmet blend of Wisconsin, New York, and Vermont Sharp Cheddar's. Mix Cracker Barrel cheeses or try "Kraft Three Cheese" mix.

They were okay, but not great. The cream curdled after they sat for a while and I had to throw out the leftovers.

Spectacular.... These are amazing.... Made them for Easter dinner and my grandmother asked me to make them for her birthday brunch and add ham... they were so good....
