Tossed Tortellini Salad

Fresh basil, tomato and a delicious Dijon dressing flavor this tortellini toss for a simple lunch or dinner.

Ingredients

package (9 ounces) refrigerated cheese-filled tortellini
1
package (9 ounces) refrigerated chicken-filled tortellini
4
cups shredded leaf lettuce
3
tablespoons chopped fresh basil leaves or 1 teaspoon dried basil leaves
2
medium tomatoes, chopped (1 1/2 cups)
1/2
teaspoon pepper
3
tablespoons olive or vegetable oil
2
tablespoons cider vinegar
1
tablespoon Dijon mustard

  • 1 Cook and drain tortellinis as directed on packages. Mix lettuce, basil, tomatoes and pepper in medium bowl. Stir in tortellinis.
  • 2 Mix oil, vinegar and mustard; toss with tortellini mixture. Cover and refrigerate about 1 hour or until chilled.

Great for a picnic! I substituted baby spinach for the lettuce & used 3 cheese tortellini instead of chicken for my vegitarians. It fed more than 8 people & got raves all around.

THis has become a staple in our house. Its an excellent recipe to wow a guest or bring to a picnic. I like that I can prepare it ahead of time and its ready to go at dinner. I put in cut up cooked chicken and served as a meal! My husband always tells me that "i know how to treat him right" when this goes on the plate. We are also not good left over people, but he eats this leftover~
