Tossed Salad with Apple Cider Dressing

Ingredients

Apple Cider Dressing

  • 1/4 cup frozen (thawed) apple juice concentrate
  • 2 tablespoons chopped fresh parsley or 2 teaspoons parsley flakes
  • 2 tablespoons finely shredded apples
  • 3 tablespoons reduced-fat sour cream
  • 3 tablespoons water
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Salad

  • 2 cups bite-size pieces romaine lettuce
  • 2 cups bite-size pieces fresh spinach
  • 1 cup bite-size pieces iceberg lettuce
  • 1 medium zucchini, shredded (1 cup)
  • 2 oz chopped fresh mushrooms (1/2 cup)
  • 8 medium radishes, chopped (1/2 cup)
  • 1 small red bell pepper, chopped (1/2 cup)

    In large bowl, mix all dressing ingredients with wire whisk or fork until well blended.

    Add salad ingredients; toss.

  • Enlist your food processor or chopper to make quick work of this fresh-tasting salad.
  • Leftover apple juice concentrate is a handy ingredient to have around. Use a tablespoon or 2 to flavor yogurt, cottage cheese, pancake syrup or even milk!
