I added onion, crushed red pepper, and a bit of Parmesan cheese and substituted canned diced tomatoes and it was SO good. Very flavorful! My boyfriend is a meat eater to the core and he went back for thirds!

This would be great with some pesto mixed in. Knorr has a packaged Pesto that you mix with water and a little oil, I will cut down on the water and it should add a lot of flavor to this dish.

My boyfriend & I loved this recipe! I read some other comments and decided to use canned, diced tomatoes instead of the fresh ones (diced with garlic, oregano, & basil). And instead of a fresh pepper, I used asparagus. I will def make this again!

I thought this dish was super quick and easy, and it felt pretty healthy and nutritious. I did think it was a little bland and could have used a sauce. I added fresh garlic and green onions, but still it needed something else...? Maybe next time I'll add some cheese or a can of chopped tomatoes in sauce. Overall yummy and quick!

This recipe is great! Super fast and easy to assemble. Only thing I would do differently next time is I would add the tomatoes at the very end. Mine became a bit mushy while stirring in the tortellini. This recipe did serve four but the portions were small.

I made this yesterday and I was very impressed! I am definitely making this again. The only thing I would do different would be to add more zucchini and a little less bell peppers.

I made this today for myself and have never tasted zucchini before and starting to like cooked peppers. I would say it was not bad. I did add some Ragu Traditional sauce just 1/2 cup for an extra 70 calories to give it some taste. I will use a yellow pepper next time instead of a green to make it a little sweeter as well. Over all I would say if you are going to diet and are looking for something that will hold you over for about 2hrs until you next meal or supplement this will do just fine and make sure you do not add the roll like they do in the pic. Cutting the veg. was the most time consuming.
