uncooked refrigerated or dried cheese-filled spinach tortellini
1/2
cup Italian dressing

cooked peeled deveined medium shrimp

small cherry tomatoes

Directions

  • 1 Cook and drain tortellini as directed on package; cool.
  • 2 Place dressing in shallow bowl. Stir in tortellini, shrimp and tomatoes. Cover and refrigerate 1 to 2 hours, stirring once to coat.
  • 3 Drain tortellini mixture. Thread tortellini, shrimp and tomatoes alternately on each of twelve 8-inch skewers.

These were so simple to make and the luncheon attendees loved them. They couldn''t believe that such great flavor came from such a simple recipe. So simple, even they could do it at the next lunch.

I used this recipe for a class project. It was so good everyone ate it. I got tons of compliments on it. I don''t like shrimp very well and even I loved it!! YUM!

Every time I make this it disappears quickly. I use different types of tortellini and I usually marinate it overnight to lets to flavors combine better. I also cut the skewers in half or use toothpicks for individual servings. It is very colorful and very yummy!
