Ingredients

tablespoon olive oil
1
Zucchini, sliced
1/2
cup Green Onions, chopped
2
Cloves Garlic, chopped
1
can RED GOLD diced tomatoes with Basil, Garlic & Oregano, drained
1/4
teaspoon black pepper
2
eggs
4
Egg whites
1
cup mozzarella cheese, shredded

  • 1 Preheat oven to 350 F. In an oven-safe skillet saute zucchini, green onions and garlic in oil. Cook for 5 minutes or until tender.
  • 2 Add RED GOLD tomatoes and black pepper. Cover and heat until zucchini is tender.
  • 3 In a small bowl, beat together eggs and egg whites. Pour over vegetable mixture and sprinkle with cheese.
  • 4 Bake until eggs are set and a knife inserted in the center comes out clean, 10-15 minutes. Cut into wedges to serve.
