Tomato Zucchini Frittata
Yummy, easy and quick!
tablespoon olive oil
cup Green Onions, chopped
Cloves Garlic, chopped
can RED GOLD diced tomatoes with Basil, Garlic & Oregano, drained
teaspoon black pepper
cup mozzarella cheese, shredded
Preheat oven to 350 F. In an oven-safe skillet saute zucchini, green onions and garlic in oil. Cook for 5 minutes or until tender.
Add RED GOLD tomatoes and black pepper. Cover and heat until zucchini is tender.
In a small bowl, beat together eggs and egg whites. Pour over vegetable mixture and sprinkle with cheese.
Bake until eggs are set and a knife inserted in the center comes out clean, 10-15 minutes. Cut into wedges to serve.
