Tomato Soup Cake

Don't be afraid of the name...this is actually DELICIOUS! It tastes like a cross between carrot cake and spice cake! This was an Internet recipe, posted by a cook named Pearl Florick. My own photo.

Ingredients

2: Tbls butter

1: cup sugar

1: large eggs

1: tsp. baking soda

1: can tomato soup

1 1/2: cups all purpose flour

1: tsp. cinnamon powder

1/2: tsp. ground cloves

Directions

1 Preheat oven to 350 degrees.
2 Grease a 8x8x2 inch baking pan.
3 In a medium size bowl, cream together the butter and sugar with the egg.
4 In a small bowl, mix together the tomato soup and baking soda.
5 In a large bowl, wisk together the flour, cinnamon and ground cloves. Then add the egg mixture and the tomato soup mixture to the flour mixture. Stir til well combined.
6 Pour into prepared baking pan and bake for 40 minutes or til toothpick, inserted into the center, come out clean.
7 Remove from oven and cool completely.
8 When completely cooled, turn over, onto a serving platter and frost with your favorite icing or glaze. I used a sweetened cream cheese glaze.
9 I do not suggest eating this cake warm...it taste SO much better chilled!
