Ingredients

package (7 ounces) small pasta shells

medium tomatoes, chopped (1 1/2 cups)
2
medium green onions, chopped (2 tablespoons)
2
garlic cloves, finely chopped
1/4
cup chopped fresh parsley
2
tablespoons olive or vegetable oil
2
teaspoons chopped fresh basil leaves or 1/2 teaspoon dried basil leaves
1/2
teaspoon salt
1/8
teaspoon coarsely cracked pepper

Directions

  • 1 Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • 2 Mix remaining ingredients. Toss pasta and tomato mixture. Cover and refrigerate about 2 hours or until chilled.

I made this recipe and loved it.... I didn't have green onions so I used regular sweet onions, also I tried it with different types of vinegar (balsamic, rice wine, etc.) This recipe is easy and fun to change around to accomodate your own taste.

I absolutely loved this! I made it for a potluck where there was lots of other food so this kind of got pushed to the back, but I ate it for the next few days for lunch and snacks. So good!
